Every time you eat, bacteria produce acids that draw calcium and phosphate out of your enamel. Normally, saliva redeposits these minerals. But when acid attacks happen too frequently, the enamel develops white spot lesions, the earliest stage of a cavity. At this point, the process can still be reversed.

Yes. S. mutans, the primary cavity-causing
